Cold cucumber soup with peanut butter

Ingredients for 4 servings:

  • 3 cucumbers
  • 500 ml buttermilk
  • 200 ml sour cream
  • 1 garlic clove(s)
  • 1 tbsp, leveled stock powder
  • 1 tbsp lemon juice
  • 2 tbsp peanut butter, chunky
  • 1 bunch of dill
  • e.g. salt and pepper
  • e.g. cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

for hot days

First, two of the three cucumbers are diced into large cubes. Then, in a large bowl, puree the cucumber cubes along with the buttermilk, sour cream, bouillon powder, peanut butter, lemon juice, and crushed garlic clove. The soup is then seasoned with salt, pepper, and cayenne pepper. The remaining cucumber is diced into small cubes and the dill is finely chopped. Finally, both are added to the soup, stirred well, and seasoned again. Serve cold.
