Balsamic mushrooms

Ingredients for 4 servings:

  • 800 g mushrooms, brown
  • 4 tbsp sugar
  • 5 tbsp balsamic vinegar
  • 1 small pepper
  • 1 handful of basil leaves
  • salt and pepper
  • 3 tbsp olive oil

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 40 minutes

Clean the mushrooms and quarter or halve them if necessary. Place them in a pan “dry” (i.e., without fat or water) and fry over medium heat for about 15-20 minutes, turning frequently. Add the sugar and melt it, caramelizing the mushrooms. Deglaze with balsamic vinegar and let it simmer briefly. Season generously with salt and pepper. Remove the pan from the heat and toss the mushrooms generously with basil. Halve the peppers, remove the seeds, and add them with the oil. Let them marinate in the refrigerator for one to two days, then remove the peppers. The mushrooms also make a great amuse-bouche on appetizer spoons.
