Ingredients for 4 servings:
- 200 ml vegetable stock
- 200 g couscous
- 1 tbsp butter
- 2 stalk(s) spring onion(s)
- 1 m.-large pepper
- 4 m.-sized tomatoes
- ½ cucumber(s)
- 200 g feta cheese
- 3 sprigs of mint
- 3 sprigs of parsley
- 10 g tomato paste
- 3 tbsp white wine vinegar
- 2 tsp agave syrup or honey
- 1 tsp honey mustard or regular mustard
- 2 tbsp olive oil
- e.g. salt and pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Heat the vegetable stock and mix with the couscous and butter. Slice the spring onions into rings. Dice the bell peppers, tomatoes, cucumber, and feta. Fold the vegetables and feta into the couscous. Finely chop the mint and parsley leaves and fold them in. Combine the remaining ingredients and toss into the salad. Season to taste with salt and pepper.
