Ingredients for 3 servings:
- 75 g breadcrumbs
- 35 g Parmesan, grated
- 1 tsp Italian herbs
- e.g. salt and pepper
- 2 eggs
- 3 tbsp flour
- 4 large zucchini
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
To make the seasoning, mix the breadcrumbs, Parmesan cheese, and Italian herb mix in a bowl. Season with pepper and salt if desired, then set the mixture aside. Whisk the eggs with pepper and salt in another bowl and set the mixture aside. Preheat the oven to 200°C (fan oven). Put the flour in a third bowl and then cut the zucchini into sticks. To do this, first cut the zucchini vertically 3-4 times and then lay them out in slices. Then cut these slices into sticks and halve them again if necessary. This depends on the size of the zucchini. Finally, coat the zucchini sticks in breadcrumbs, first in flour, then in egg, and then in the seasoning. Place all the sticks on one or more baking sheets lined with baking paper and bake for about 20 minutes until golden brown.
