Peppers – onions – vegetables for spring rolls

Ingredients for 2 servings:

  • 2 large red bell peppers
  • 2 large onions
  • 10 margarine
  • 3 tsp basil, dried
  • 2 tsp thyme, dried
  • 1 tsp paprika powder, heaped
  • Salt
  • Cayenne pepper
  • vegetable broth
  • 2 tbsp Parmesan, grated

You’ll need 2 large frozen spring rolls. Prepare the spring rolls according to the package instructions, ideally in a preheated oven. In the meantime, deseed the bell peppers and cut into small pieces. Peel the onions and slice them into rings. Heat the margarine in a saucepan, first briefly fry the onions, then add the bell peppers. Sauté everything thoroughly and sprinkle with paprika. Reduce the heat slightly and add a little water. Season with salt, pepper, and vegetable stock to taste. Finally, fold in the herbs and cheese. Serve with the finished spring rolls.
