Ingredients for 1 servings:

  • 150 g low-fat curd cheese
  • 3 eggs
  • ½ pack of baking powder
  • 1 pinch of salt
  • 50 g chia seeds
  • 50 g flaxseed, crushed
  • 25 g psyllium husks
  • 15 g wheat bran

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 5 minutes

with only 4.5 g carbohydrates, for 4 rolls

Preheat oven to 150°C fan/convection oven. Using a hand mixer, combine the quark, eggs, baking powder, and salt until smooth. Add the remaining ingredients and mix thoroughly. With wet hands, form 4 dumplings, place them on baking paper, and press them into small flatbreads. Score the rolls and sprinkle with sunflower seeds or similar, if desired. Bake at 150°C fan/convection oven for one hour. Don’t skimp on the salt. Sautéed onions in the dough also add a subtle flavor.
