Ingredients for 1 servings:

  • 50 g ground almonds
  • 20 g flaxseed, crushed
  • 20 g chia seeds
  • 30 g psyllium husks
  • 1 tsp baking powder
  • 1 pinch of salt
  • 300 g low-fat curd cheese
  • 4 eggs

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Weigh all the dry ingredients one by one, place them in a bowl, and stir. Add the low-fat quark and eggs, mix well, and let stand for about 10 minutes. Preheat oven to 180°C (fan oven) and line a baking tray with baking paper. With wet hands, form 4 rolls from the dough, place them on the baking tray, and flatten them slightly. Then, using a shot glass, cut out a circle in the center of the roll; you won’t need this circle again. Bake in the hot oven for about 25 minutes. Let cool and top with whatever you like. Tip: You can also warm them up in the toaster.
