Ingredients for 1 servings:

  • 1,000 g spelt flour, type 1050
  • 2 packs of cream of tartar baking powder
  • 1 tsp baking soda
  • 2 tsp salt
  • 2 carrots, medium-sized
  • n. B. herbs
  • 750 ml buttermilk
  • 250 g quark, 40%
  • 100 g cream cheese, 20%

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

without yeast and sourdough, with cream of tartar baking powder

This recipe is based on Backmoouse’s “Quick Yogurt Bread.” Combine spelt flour with salt, cream of tartar, and baking soda, along with the very finely chopped carrots, onions, and herbs. Gradually add buttermilk, cream cheese, and quark, and mix. I had a sticky dough, so I divided it into two loaf pans. Due to the moisture content, bake at 180 degrees Celsius on the second rack from the bottom for 50-60 minutes. Simple and quick, with many variations possible.
