Ingredients for 4 servings:
- 1 cup(s) basmati rice
- 2 cups vegetable broth
- 2 small onions
- 250 g mushrooms, fresh
- 1 bell pepper(s), red
- 2 tomatoes
- 100 g feta cheese
- curry powder
- Salt
- 3 tsp olive oil

Cook the basmati rice in the vegetable stock until tender. Peel and dice the onions, then fry them in olive oil in a large pan. Wash and slice the mushrooms, then fry them in the pan for about 3 minutes. Then slice the bell peppers and add them to the pan. Fry for another 5 minutes. Dice the tomatoes and add them to the pan. Before they start to fall apart, add the cooked rice to the pan and stir well. Season with salt and curry powder. Finally, dice the feta cheese, add it, and serve the rice dish immediately; you don’t want the cheese to melt.
