Ingredients for 2 servings:
- some spring onions
- 2 handfuls of mushrooms, fresh
- ½ bell pepper(s), yellow
- 50 g couscous
- 150 ml vegetable stock
- e.g. chili powder
- e.g. paprika powder
- e.g. salt and pepper
- 100 g sheep’s cheese, shredded
- some cherry tomatoes, halved

quick vegetarian recipe
Clean and finely chop the spring onions, mushrooms, and bell peppers. Sauté the onions in a little olive oil, then add the mushrooms and bell peppers. Once everything is well browned, add the couscous and pour the vegetable stock over the pan. Season to taste. Stir frequently until the couscous has absorbed the water. Finally, add the feta cheese and cherry tomatoes and stir one last time. This dish tastes best served with some spring quark and herbs.
