Kohlrabi spaghetti with soy bolognese

Ingredients for 2 servings:

  • 2 kohlrabi
  • 80 g soy granules
  • 1 onion(s)
  • 1 carrot(s)
  • 1 can of pizza tomatoes, 400g
  • 1 tbsp tomato paste
  • salt and pepper
  • oregano
  • possibly harissa or chili powder
  • 30 g Parmesan

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Low carb, low fat, low calories

Soak the soy granules in boiling stock for 10 minutes and squeeze out any excess water. Then treat them as you would with regular minced meat, i.e. fry them until crisp and season well (soy needs to be well seasoned!). Add the diced onion. Add the finely grated carrot and stir in the tomato paste. Sauté briefly and then deglaze with the tomatoes. Season with oregano and simmer for a few more minutes. If you like, you can also add some harissa or chili. Peel the kohlrabi and cut into fine strips using a vegetable peeler. Cook these in boiling stock for approx. 7 minutes. Drain the kohlrabi and then serve with the sauce and Parmesan.
