Curry noodles with beef

Ingredients for 4 servings:

  • 2 tbsp oil
  • 2 clove(s) garlic, chopped
  • 1 tbsp red curry paste (more or less depending on the spiciness)
  • 500 g beef, for quick frying (steak, fillet etc.), cut into strips
  • 300 g pasta (bavette)
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 jar baby corn, quartered
  • 2 carrots, cut into sticks
  • 1 bunch of spring onions, cut into rings
  • n. B. Chili pepper(s), red, pitted and sliced

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cook the pasta al dente and drain. Reserve a cup of the pasta water. Heat the oil in a large pot and sauté the curry paste and garlic. Then add the finely chopped beef and brown it until browned. Stir constantly, making sure it doesn’t overcook. Add the carrots and spring onions and cook briefly. The juices will separate from the pan. Now add the drained pasta, the baby corn, and the sauce. Mix everything thoroughly and let it cook for a moment. If it gets too dry, add a little more of the pasta water. If you like, garnish with finely chopped chili peppers.
