Coffee goulash – vegetarian

Ingredients for 3 servings:

  • 1 kg mushrooms
  • 100 g butter, maybe a little more
  • 1 garlic clove(s)
  • 3 onions
  • 40 g flour
  • 2 cup(s) red wine, tart
  • 1 cup water
  • ½ cup of strong coffee
  • 2 tsp salt
  • ½ tsp pepper
  • ¼ tsp marjoram

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Briefly wash and quarter the mushrooms. Brown them in batches in the butter and remove from the pan. Finely dice the onions and chop the garlic, fry both lightly, and remove from the pan. Add a little more butter to the pan, if desired. Stir in the flour, deglaze with water, and stir vigorously with a whisk. Add the wine, coffee, and spices and stir until the sauce thickens slightly. Return the mushrooms, onions, and garlic to the pan and simmer gently with the lid on for 1 hour. Serve with tagliatelle or baguette.
