Ingredients for 2 servings:

  • 2 cod fillets, each approx. 250 g (without skin and bones)
  • olive oil
  • Sea salt and pepper, black, freshly ground
  • 2 handfuls of cocktail tomatoes, red and yellow
  • 1 handful of basil, fresh leaves
  • 1 ball of mozzarella
  • 1 handful of Parmesan, grated fresh

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 220°C (top/bottom heat). Place the cod fillets in a roasting pan or casserole dish coated with olive oil. Drizzle with olive oil and season. Top the fillets with halved tomatoes, basil leaves, and sliced ​​mozzarella cheese. Sprinkle with Parmesan cheese and drizzle with more olive oil. Bake in the hot oven on the top rack for about 15 to 20 minutes until golden brown.
