Ingredients for 2 servings:
- 2 cod fillets, each approx. 250 g (without skin and bones)
- olive oil
- Sea salt and pepper, black, freshly ground
- 2 handfuls of cocktail tomatoes, red and yellow
- 1 handful of basil, fresh leaves
- 1 ball of mozzarella
- 1 handful of Parmesan, grated fresh
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
with cocktail tomatoes – Low Carb
Preheat the oven to 220°C (top/bottom heat). Place the cod fillets in a roasting pan or casserole dish coated with olive oil. Drizzle with olive oil and season. Top the fillets with halved tomatoes, basil leaves, and sliced mozzarella cheese. Sprinkle with Parmesan cheese and drizzle with more olive oil. Bake in the hot oven on the top rack for about 15 to 20 minutes until golden brown.
