Vegetarian cauliflower meatballs

Ingredients for 4 servings:

  • 400 g cauliflower
  • 100 g cheese, grated
  • 1 egg(s)
  • salt and pepper
  • some breadcrumbs
  • Thyme

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

very quick and easy to do

Wash the cauliflower, cut into small florets, and cook in salted water until tender. Then chop it with a hand blender, not too finely. This can also be done with a fork. Mix it with the egg, cheese, and seasoning in a bowl. Add the breadcrumbs, wait a bit, and let it swell. Form the mixture into patties and fry them in olive oil on both sides. If desired, you can also add a small onion. Serve with a green salad.
