Baked cucumbers

Ingredients for 2 servings:

  • 2 large cucumbers
  • 1 tbsp dill, chopped
  • 50 g cheese, grated
  • Butter, in flakes
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the cucumbers and cut into approximately 1 cm cubes. Sauté in lightly salted water for about 20 minutes until soft. Then remove the cucumbers and reserve about 1 cup of the stock. Grease an ovenproof dish and add the cucumber cubes. Pour in the stock, making sure the bottom is lightly covered. Season with salt and pepper, sprinkle with dill and cheese, and top with a few knobs of butter, if desired. Bake in a preheated oven at 200°C for 10-15 minutes. Serve with any kind of potato (mashed potatoes, croquettes, boiled potatoes, etc.), as well as meatballs, sausages, or similar.
