Whole-grain tofu burger

Ingredients for 2 servings:

  • 300g tofu
  • 2 carrots
  • 2 small onions
  • 2 eggs
  • 8 tbsp spelt flour
  • 1 tbsp olive oil
  • 1 pinch of curry powder
  • 2 pinch(s) chili powder
  • 1 pinch of ginger powder
  • Salt
  • 2 tbsp oil, for frying
  • 2 rolls (wholemeal)
  • some cream cheese, reduced fat

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mash the tofu mixture finely with a fork. Peel and finely chop the onions and add to the tofu. Peel and finely grate the carrots and add them. Stir in the eggs, flour, and olive oil and add the seasoning. Season to taste. With wet hands, form the mixture into small burgers and let them rest for 10 minutes. Heat the oil in a pan and fry the burgers on both sides over low heat. Cut open the whole-wheat buns, spread a thin layer of cream cheese, and arrange the tofu patties on top.
