Tomato-pepper salad

Ingredients for 2 servings:

  • 2 tomatoes (vine tomatoes)
  • ½ bell pepper(s), yellow
  • ½ bell pepper(s), red
  • 1 shallot(s)
  • 1 tbsp balsamic vinegar
  • 6 tbsp extra virgin olive oil
  • 1 pinch of thyme
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Preheat the oven grill to its highest setting. Deseed and quarter the peppers. When the oven is hot, grill them on the top rack until the skin turns black and blisters form. Remove the peppers from the oven and cool with a wet towel. Peel the peppers. Roughly dice the shallots, tomatoes, and peppers. Mix the oil, vinegar, and seasonings to make a salad dressing. Briefly stir in the vegetables and serve.
