Scrambled eggs a la Maja

Ingredients for 2 servings:

  • 4 m.-sized eggs
  • 2 pinch(s) pepper, white and black
  • 2 pinches of salt
  • 1 tsp paprika powder
  • 3 pinch(s) Fondor
  • 75 ml milk
  • 1 pack of diced ham OR:
  • 200 g ham, raw OR:
  • salami
  • 2 tbsp olive oil
  • 150 g mushrooms
  • 1 small bunch of chives
  • possibly cheese

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Crack the eggs in a large bowl and season as above. Then add the milk and – to make the eggs nice and fluffy, do not whisk them, but use a hand mixer or a stick blender to mix well until bubbles have formed on the surface. Now add the oil to a preheated pan and slowly add the egg over medium heat. Let it set, stirring occasionally with a wooden spoon. When the egg has reached the desired consistency, transfer everything to a plate and briefly fry the ham, salami or diced ham, mushrooms and chives in the same pan. You can also modify the recipe by adding a little grated Pecorino or Parmesan before whisking – for a completely different, savory touch! Serve everything with toast – really delicious as a snack.
