Ingredients for 1 servings:

  • 3 carrots
  • 3 bell peppers (snack peppers)
  • 1 large onion(s)
  • 1 small can of corn
  • 1 small can of mushrooms (3rd choice)
  • 2 small cans of peas

I came up with this recipe because I wanted something to snack on during my diet. Makes about 30 pieces

Clean and chop the carrots. Peel and chop the onion into large pieces. Deseed and chop the bell peppers. Drain the peas, sweetcorn, and mushrooms through a sieve, reserving the liquid. Place the carrots, onions, and bell peppers in a saucepan. Pour the reserved liquid over the mixture and cook until a paste forms. If necessary, more water can be added during cooking. Transfer the paste to a bowl. Knead with the mushrooms, sweetcorn, and peas using a food processor or hand mixer until a firm paste forms. Preheat the oven to 200°C. Drop the dough with a tablespoon onto a greased baking sheet or baking paper. Bake on the middle rack for 40 minutes until crispy brown. When done, they will be soft on the inside and crispy on the outside. Delicious on their own or as a side dish.
