- 100 g salmon
- 1 egg(s)
- 1 brioche roll
- 1 tbsp hollandaise sauce
- salt and pepper
- 1 tbsp vinegar

Halve the brioche bun. Bring a pot of water and vinegar to a boil. Stir the boiling water with a wooden spoon to create a whirlpool. Crack the egg and drop it directly into the pot, ensuring the water continues to create a whirlpool. Meanwhile, slice the avocado and place the salmon on the half brioche bun. After 4 minutes, remove the egg with a slotted spoon, let it drain, and place it on top of the salmon. Drizzle with a tablespoon of hollandaise sauce and season with salt and pepper to taste. Place the other brioche half on the plate and arrange the avocado slices next to it.
