Hearty bean soup

Ingredients for 4 servings:

  • 500 g beans, green, fresh or frozen
  • 1 Cabanossi or Mettwurst
  • 500 g potatoes, floury, diced
  • 2 onions, red
  • 1 bunch savory, fresh
  • 1 ½ liters vegetable broth
  • some oil or margarine

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

quick stew with beans and potatoes

Heat the fat in a pan and add the chopped onions. Dice the Cabanossi or Mettwurst and fry them. Trim the fresh beans and fry them briefly. Pour in 1-1.5 liters of vegetable stock. Add the bunch of savory (alternatively, you can use dried savory from the spice rack). Cook for 10 minutes. Add the diced potatoes. Cook until the desired consistency is reached. Discard the fresh savory. This recipe can also be prepared using frozen beans. Cook the potatoes first and add the beans last.
