Chicken breast fillet with bacon

Ingredients for 4 servings:

  • 500 g chicken breast fillet(s)
  • 100 g smoked bacon, in thin slices
  • 3 carrots
  • 1 onion(s)
  • 1 leek(s)
  • 1 cup of cream, approx. 200 g
  • 1 cup of processed cheese, approx. 200 g
  • 1 tsp stock powder
  • e.g. salt and pepper
  • e.g. cayenne pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Dice the onion, slice the leek, and slice the carrots. Cut the chicken breast fillets into thick slices and wrap them in the bacon slices. Place the fillet slices in a baking dish. Preheat the oven to 180°C (top/bottom heat). Heat a little oil in a pan and sauté the vegetables. Deglaze with 1 glass of water and add the stock powder. Let everything simmer for about 1 minute. Add the cream and the processed cheese and stir until the processed cheese is completely melted. Season with salt and pepper to taste. I also add a pinch of cayenne pepper. Pour the sauce over the chicken fillets. Bake in the preheated oven on the middle rack for about 30 minutes. This goes well with rice or pasta and a mixed salad, or even fried potatoes.
