Chicken breast fillet à la Bella Italia de Stephano

Ingredients for 2 servings:

  • 400 g chicken breast fillet(s)
  • 3 m.-large tomato(s)
  • 1 ball of mozzarella
  • 75 ml cream
  • some olive oil for the mold
  • pinch(s) salt and pepper
  • Paprika powder, sweet
  • oregano
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash the chicken breast fillet, pat dry, and lightly season with salt and pepper on all sides. Place in the greased baking dish. Finely dice two of the tomatoes and place in a small bowl. Now add the cream and a little water. Stir in the salt, pepper, paprika, and oregano and pour over the meat, ensuring everything is well coated. Thinly slice the third tomato and place on top of the meat. Slice the mozzarella cheese in the same way and place on top. Bake in a preheated oven at 180°C (convection oven) for about 30 minutes. Serve with pasta and a mixed leaf salad.
