Gnocchi with broccoli and salmon sauce

Ingredients for 4 servings:

  • 500 g salmon fillet(s)
  • 1 kg broccoli
  • 700 g gnocchi from the refrigerated counter
  • 1 tsp vegetable oil
  • 250 ml milk
  • 125 ml vegetable stock
  • 4 tbsp sauce thickener, light
  • 2 tsp chives
  • Parmesan, grated, to taste
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Rinse the salmon fillets, pat dry, and dice. Wash the broccoli, divide into small florets, and cook in boiling salted water for about 5-7 minutes until al dente. Cook the gnocchi according to the package instructions. Heat oil in a pan and fry the salmon cubes for about 2 minutes until golden brown. Deglaze with milk and stock and season with salt, pepper, and nutmeg. Stir in the sauce thickener and bring to a boil. Drain the broccoli and fold in the chives. Drain the gnocchi and fold in the chives. Serve sprinkled with Parmesan cheese.
