Vegetable puff pastry rolls with sauce

Ingredients for 2 servings:

  • 1 pack of puff pastry
  • 150 g broccoli
  • 1 bell pepper(s)
  • 200 g sour cream
  • 200 g goat cheese
  • 1 ½ handfuls of Parmesan, grated and optionally some for topping
  • 2 pinches of paprika paste (Erős Pista)
  • 100 ml cream
  • 1 pack of ham (200 g)
  • 2 cloves garlic
  • salt and pepper
  • some paprika powder
  • some nutmeg
  • some rosemary
  • Butter for frying
  • 1 egg(s), beaten, for brushing

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 20 minutes

Wash the vegetables and cut into bite-sized pieces. Then fry them in a little butter. Meanwhile, drain the goat cheese, shred it, and place it in a bowl. Add the sour cream, 1 1/2 handfuls of Parmesan, and the crushed garlic cloves. Season with salt, pepper, nutmeg, paprika, and rosemary. Mix everything well. Remove the puff pastry from the refrigerator, place the ham on top, and spread half of the goat cheese cream on top. Spread the sautéed vegetables on top, roll up the puff pastry, and brush with beaten egg. Bake in a preheated oven at 200°C (top/bottom heat) for half an hour. After 20 minutes, sprinkle some Parmesan on top so it melts nicely onto the puff pastry. Make the sauce from the remaining cream. Add the cream, along with some paprika paste (Erős Pista – a regular spice paste will do), and tomato paste. Mix everything well. Now serve and enjoy.
