Mai Tai sorbet

Ingredients for 6 servings:

  • 240 ml orange juice
  • 240 ml pineapple juice, unsweetened
  • 120 ml lemon juice
  • 60 ml grenadine
  • 150 ml brown rum
  • 45 ml orange liqueur
  • 60 ml apricot liqueur
  • ½ egg white
  • 200 g raspberries, fresh

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Whisk together all ingredients, except the raspberries, and chill thoroughly in the refrigerator. Freeze in an ice cream maker until sorbet is smooth; this can take a good 45 minutes due to the alcohol. Chill glasses in the freezer, fill with sorbet using a piping nozzle, and garnish with raspberries. Warning: You won’t be able to drive after one serving of this sorbet!
