Gratinated pork fillet casserole with apples and curry cream sauce

Ingredients for 3 servings:

  • 600 g pork fillet(s)
  • 400 ml cream
  • 1 cup of crème fraîche, approx. 150 g
  • 250 g tagliatelle pasta
  • 2 apples, e.g. Pink Lady
  • 200 g cheese, grated, e.g. Gouda
  • 3 tsp curry powder
  • 3 tsp tomato paste
  • ½ tsp cayenne pepper
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Grease the baking dish. Peel, halve, core, and thinly slice the apples, 2 mm thick. Preheat the oven to 200°C (top/bottom heat). Cut the pork fillet into slices approximately 2 cm thick. Brown in a pan with a little oil for a good 1 minute on each side. Remove the meat from the pan and spread it out in the baking dish. Prepare the sauce in the pan. Slowly bring the cream to a boil. Stir in the curry, cayenne pepper, and tomato paste, and season with salt and pepper. Add a little more crème fraîche for consistency, if desired. Arrange the apple slices on the meat and pour the sauce over it. Sprinkle the Gouda cheese on top. Bake in the preheated oven on the middle rack for approximately 25 minutes, until the cheese is nicely browned and the dish is ready. Meanwhile, cook the tagliatelle according to the package instructions. Serve with the tagliatelle and a fresh salad with honey and mustard dressing.
