Light pasta salad with apples, gherkins and cooked ham

Ingredients for 4 servings:

  • 250 g spaghetti
  • 3 apples
  • 4 large gherkins
  • 200 g cooked ham or ham sausage
  • 4 tbsp mayonnaise, light, with 10% fat content
  • 150 g yogurt
  • 150 ml cucumber water
  • 1 tbsp tomato ketchup
  • 1 tsp Sriracha sauce (Super Hot Chili Sauce)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 20 minutes

Mom’s best pasta salad, fruity and with a slight acidity and spiciness

Cook the spaghetti in salted water and drain in a sieve 2 minutes before the end of the specified cooking time. Rinse thoroughly with cold water and let drain. Cut the apples, gherkins, and cooked ham into small cubes. Mix the salad dressing ingredients together in a bowl and season with salt and pepper. Place the spaghetti in a large bowl and mix well with the remaining ingredients. Let the pasta salad marinate in the refrigerator for at least two hours, but ideally overnight, and remove it from the refrigerator about 45 minutes before eating. If the salad is a little too dry after marinating, you can stir in a little more cucumber juice.
