Pasta with avocado and salmon

Ingredients for 2 servings:

  • 200g spaghetti
  • 1 avocado(s), ripe
  • ½ lemon(s), juice
  • 250 g salmon fillet(s)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 pinch(s) of pepper
  • possibly basil or roasted cherry tomatoes, for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Bring salted water to a boil and cook the spaghetti according to the package instructions until al dente. In the meantime, wash and dry the salmon fillets and fry them in olive oil in a non-stick pan over low heat. Season with salt and pepper. Peel and pit the avocado and puree it in a blender with lemon juice, salt, and pepper. The consistency will still be firm, so add just enough of the pasta water to create a smooth mixture. You can make it more of a pesto-like consistency, thick, or creamy, depending on your preference. When the pasta is ready, drain the pasta and stir in the avocado mixture. Serve on a plate. Tear the cooked salmon into pieces and divide it between the plates. Garnish with basil or roasted cherry tomatoes, if desired.
