Ingredients for 4 servings:
- 1 onion(s)
- 1 garlic clove(s)
- 3 tbsp vegetable oil
- 450 baby spinach, fresh
- 200 g wild rice
- 250 g shrimp(s)
- 1 tbsp, heaped sesame seeds
- 1 avocado(s)
- 4 tbsp soy sauce
- 2 tbsp lime juice
- 1 tsp sesame oil
- ¾ tsp sambal oelek
- ½ bunch coriander
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Peel and finely chop the onion and garlic. Heat 1 tablespoon of oil in a pan and sauté until translucent. Add the spinach and 4 tablespoons of water and thaw over medium heat, stirring occasionally. Season with salt and pepper. Cook the rice in boiling salted water according to the package instructions. Rinse the shrimp in cold water and drain. Heat 2 tablespoons of oil in a pan. Fry the shrimp on all sides for 3-5 minutes. Add the sesame seeds and fry briefly. Season with salt and pepper. Halve the avocado, remove the pit, peel the halves, and cut the flesh into wedges. Mix together the soy sauce, lime juice, sesame oil, and sambal oelek. Wash the cilantro, shake dry, and pluck the leaves from the stems. Divide the rice, spinach, shrimp, and avocado between four bowls. Drizzle with the soy sauce mix and sprinkle with cilantro.
