Cheese and broccoli soup with minced wild boar

Ingredients for 4 servings:

  • 500 g minced wild boar meat
  • 500 g broccoli
  • 500 ml vegetable stock
  • 500 ml water
  • 200 g processed cheese
  • 100 g crème fraîche
  • 50 g shallot(s)
  • some salt
  • some pepper
  • some sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

simple soup and a good alternative for people who don’t like leeks

Sauté the shallots in a pan with oil and then add the minced meat. Season with salt and pepper and sauté. After about five minutes, add the sugar and deglaze with the vegetable stock. Bring to a boil briefly, while cutting the broccoli into small florets and adding it to the pan. Chop the parsley and add it. Cover the pan and simmer for ten minutes, adding more water frequently. Then add the processed cheese and crème fraîche and stir until completely dissolved. Bring back to a boil briefly.
