with homemade mayonnaise

Briefly mix the egg yolk, vinegar, mustard, and seasonings (if desired) in a blender. Then, with the blender running, slowly add the oil in a small stream. Stop and mix occasionally. Next, finely chop 1 peeled onion and 5 slices of cooked ham in a food processor. Add the minced meat to the mayonnaise in the blender. Mix briefly again and then transfer to a bowl. Finely chop half the peeled onion and the remaining slice of cooked ham by hand and sprinkle over the salad. Tastes heavenly on bread or rolls.
