Pasta salad with tangerines

Ingredients for 4 servings:

  • 500 g pasta (croissants or similar)
  • 1 can of vegetables (Mexican vegetable platter)
  • 1 can of mandarin orange(s), small
  • 200 g ham or 1 can of tuna in oil
  • 1 jar mayonnaise or light salad dressing
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta al dente. Drain the vegetables and mandarin oranges (or the tuna if desired, but reserve the oil and add it to the mayonnaise later). Dice the ham. Mix the pasta with the vegetables, mandarin oranges, and chopped ham or tuna. Fold in the mayonnaise and oil, or for a lighter version, just the light salad dressing, and season with salt and pepper. If you like, you can also add the mandarin orange juice; it tastes delicious too.
