Lentil soup

Spread the love

Ingredients for 4 servings:

  • 250 g lentils
  • 4 Mettenden
  • 3 small potatoes
  • 1 stalk(s) leek
  • 1 tbsp vegetable broth, instant
  • 1 tbsp soup seasoning

Instructions

Working time approx. 15 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 6 hours 45 minutes

I soak the lentils in cold water in the morning. Peel the potatoes and dice them into small cubes. Wash the leek and slice them into thin rings. The mettenden can be cut into pieces, or pierced several times with a knife and added whole. Now place the lentils, the soaking water, and the other ingredients in a large pot. Season with the vegetable stock and soup seasoning. Add enough water to cover everything. Add more water if necessary during cooking. Bring everything to a boil and simmer over medium heat for about 1.5 hours.
