Raw marinated artichokes

Ingredients for 2 servings:

  • 4 artichoke(s), fresh
  • 1 chili pepper(s), chopped
  • Thyme, fresh or dried, chopped
  • 1 cup olive oil
  • 1 lemon(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Delicious with bread or salad

Squeeze the lemon and mix the juice with 1/2 liter of water. Remove the outer leaves from the artichokes, then trim off any tough tips and parts. Cut the artichokes in half lengthwise and remove the hairs with a knife or spoon. Immediately place the artichoke halves in the lemon water to prevent oxidation. Mix the oil with the thyme and chili. Cut the artichoke halves into pieces and marinate in the oil, chili, and thyme mixture for at least an hour, but preferably overnight.
