Zucchini soup with minced beef and beef sausages

Ingredients for 4 servings:

  • 1 ½ kg zucchini
  • 450 g minced beef
  • 400 g cream cheese spread
  • 400 g sausage (beef)
  • 1 large onion(s)
  • 2 tsp chicken broth
  • Water
  • pepper
  • Salt
  • Garlic
  • Sunflower oil
  • Parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Wash the zucchini, cut it lengthwise, cut off both ends, and hollow out the zucchini. Cut the zucchini into small pieces. Chop the onion. Fry the onions in oil, add the minced meat, and fry until the minced meat is cooked through. Then add the zucchini and fry it well. Add enough water to just cover the zucchini. Add two teaspoons of chicken stock and bring to a boil. Meanwhile, chop the beef sausages and add them. When everything is cooked through, remove the pot from the heat and puree everything with a hand blender. Add the cream cheese to the pot and puree again. Season with salt, pepper, and garlic. Sprinkle with parsley before serving.
