Herb gnocchi with basil sauce and chicken breast fillet

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 2 tomatoes
  • 1 ball of mozzarella
  • 500 g gnocchi
  • cornstarch
  • 1 cup of cream
  • ½ vegetable onion(s)
  • basil
  • Thyme n
  • rosemary
  • sage
  • marjoram

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cut a pocket into the chicken breast. Stuff the chicken breast with tomato and mozzarella. Dice the onion and sauté in oil. Add the cream and bring to a boil. Season with salt, pepper, and marjoram. Thicken with cornstarch. Add a few basil leaves. Then puree the sauce with a hand blender. Sear the chicken breast on both sides and then cook in the pan for a few minutes. Then continue cooking in the oven at 120°C for about 12 minutes. Cook the gnocchi (unless you have fresh ones from the refrigerated section). Fry in a pan with butter until golden brown. Add the finely chopped herbs to taste and season with salt and pepper.
