Cajun chicken breast

Ingredients for 2 servings:

  • 2 chicken breasts, 300 g each
  • 2 tbsp olive oil
  • 4 tsp Cajun Rub
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Place the chicken breasts on baking paper, drizzle with oil, and sprinkle with a little Cajun rub. Place the chicken breasts back on the baking paper and then flatten. Turn the chicken breasts over. Add more oil and seasoning and flatten again. Preheat the oven to 80°C (top/bottom heat) using a shallow casserole dish. Season the chicken breasts with salt and pepper and briefly sear them in a grill pan over high heat. Place the chicken breasts in the casserole dish and continue cooking in the oven for 20 minutes. To serve, cut the chicken breasts into strips. Goes well with sweet potatoes, Cajun style.
