Ingredients for 4 servings:

  • 50 g bread roll(s) (dumpling bread = sliced ​​roll)
  • 100 g bacon, finely diced, streaky smoked bacon
  • 250 g semolina, coarse
  • 250 ml soup, smoked or beef broth (250 ml is approx., maybe more)
  • butter
  • Salt

Upper Austrian semolina dumplings

Toast the bread cubes in butter. Toast the bacon cubes separately – not too much – and mix with the semolina. Cover everything with hot meat broth, stir, add the bread cubes, season with salt, and let stand for 10 minutes. Form the mixture into 8 dumplings and simmer gently in smoked broth or salted water for 15 minutes – simmering rather than boiling. The dumplings are done when they rise to the top and spin. Semolina dumplings are a traditional accompaniment to cooked smoked meat, but can also be eaten as a main course – with warm coleslaw.
