Styrian semolina dumplings

Ingredients for 5 servings:

  • 250 g semolina
  • 100 g butter
  • 500 ml milk
  • 3 eggs
  • Salt
  • nutmeg

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring milk, butter, and salt to a boil. Pour in 200g of semolina, stirring constantly until the mixture starts to separate from the pan. Stir in the eggs and the remaining 50g of semolina, season with nutmeg. Let the mixture cool, then form 12 dumplings. Cook in boiling salted water and let stand for 10 minutes. Makes 9 regular-sized dumplings. Tip: This recipe can be used to make semolina dumplings as a side dish or in soup, as well as making excellent desserts. Roll the finished dumplings in buttered breadcrumbs and serve them with sweetened plum compote.
