Hearty Mediterranean scones

Ingredients for 1 servings:

  • 500 g flour
  • 3 eggs
  • 125 g butter
  • 100 ml milk
  • 80 g cream cheese
  • 30 g tomato paste
  • 1 onion(s)
  • 1 handful of sunflower seeds
  • 60 g tomatoes, dried
  • 100g Gouda
  • 100 g diced ham
  • 1 tsp salt
  • ½ tsp curry powder
  • ½ tsp paprika powder
  • 5 tbsp Mediterranean herbs, fresh or frozen
  • 3 tsp baking powder

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Peel the onion, dice it, and sauté it in a small pan until translucent. Grate the Gouda cheese or cut it into very small cubes. Chop the sun-dried tomatoes. Preheat the oven to 200 degrees Celsius and line two baking sheets with parchment paper. Mix the flour, baking powder, herbs, salt, paprika, and curry powder well in a bowl. Add the grated cheese, diced ham, sun-dried tomatoes, and sunflower seeds and mix everything well again. Then add the sautéed onion, the softened butter in pieces, eggs, cream cheese, and milk to the mixture and knead everything thoroughly. Divide the dough into 14 portions. Form each portion into a ball and flatten it until it is about 1.5 to 2 fingers thick. Divide the dough pieces between the two baking sheets and bake on the middle rack for about 15 minutes.
