Summer salad with melon and cottage cheese

Ingredients for 4 servings:

  • ½ cantaloupe melon(s) or Charentais melon
  • 200 g cottage cheese
  • some chives, fresh
  • salt and pepper
  • 12 slices of raw ham
  • some cucumber(s)
  • some tomatoes

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Slice the melon, remove the seeds, and remove the rind. Then cut into small cubes and set aside. Season the cottage cheese with salt and pepper and add freshly chopped chives. Roll the slices of prosciutto lengthwise into a funnel. Fill each funnel with some cottage cheese and arrange three of them on the plates. Distribute the melon cubes between them. Garnish with cucumbers and/or tomatoes, if desired. Perfect as a light appetizer for a barbecue.
