Fried salmon with pak choi à la Didi

Ingredients for 1 servings:

  • 150 g salmon fillet(s) with skin
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp sesame oil
  • 1 chili pepper(s), dried
  • 150 g pak choi
  • some lemon juice
  • some salt
  • 1 tbsp clarified butter

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 20 minutes

Remove any bones from the salmon fillet. Crush the chili peppers in a mortar and pestle and combine with soy sauce, honey, balsamic vinegar, and sesame oil. Add the marinade to the salmon and let it marinate for about 3 hours, turning occasionally. Divide the pak choi into leaves, wash, shake dry, and chop the leaves as needed. Steam in the microwave for about 5 minutes, remove, drain, and season with salt and lemon juice. Slowly fry the salmon fillet in hot clarified butter, skin-side down, over low heat for about 6 minutes, uncovered, until the fish is cooked through. Arrange the salmon fillet with the pak choi and serve.
