Baked potatoes filled with ham and cheese cream

Ingredients for 4 servings:

  • 8 large potatoes, longish
  • 150 g cooked ham or smoked pork cuts
  • 150 g pizza cheese, grated
  • 150 g crème fraîche
  • 3 spring onions
  • ½ chili pepper(s)
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Boil the potatoes in their jacket potatoes and cut them in half lengthwise. Scoop out each half with a spoon and mash the potato mixture in a bowl with a fork. Finely dice the ham. Clean the spring onions and cut them into fine rings, and finely dice the chili pepper, removing the seeds first. Preheat the oven to 180°C (top/bottom heat). Make a firm cream from the cheese, crème fraîche, potato mixture, diced ham, onion rings, and chili. Season to taste with the spices. Spoon the cream into the potato halves and smooth them down slightly. Then place the potato halves on a baking sheet lined with baking paper and bake in the oven for approx. 15 minutes. Serve with a mixed salad.
