Green smoothie with pomegranate

Ingredients for 4 servings:

  • 100 g lamb’s lettuce
  • 4 stalks of flat-leaf parsley
  • 125 g mixed leaf salad
  • 2 small pears, ripe
  • 1 large apple or 2 small, sweet
  • ½ pomegranate
  • 2 tbsp, levelled sugar or xylitol, agave syrup or dates
  • 2 tbsp lemon juice
  • 650 ml still water

Wash the fruit, lettuce, and parsley. Remove only the stem and blossom from the apple and pears, then quarter them. Deseed half a pomegranate in a bowl of water, holding the pomegranate under the water. This way, you won’t splash the red juice all over yourself, and the seeds will separate more easily from the rest. The soft white part will float to the top and can be skimmed off. Place half of all the ingredients in a blender (be careful not to forget the water) and blend for about 1.5 minutes. Repeat with the other half. Then combine in a large jug and stir. Can be stored in the refrigerator for up to 3 days.
