Ingredients for 2 servings:

  • 2 rolls
  • 2 eggs
  • 1 liter vegetable broth or meat broth
  • Fat, for frying
  • possibly nutmeg
  • possibly parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Recycling leftovers

Cut the stale bread rolls into cubes, then toast them in a pan with a little fat. Add vegetable or meat broth (cubes or homemade) and bring to a boil. Place the bread cubes in a bowl, crack the eggs over them, pour over the broth, and then season with a pinch of nutmeg, if desired. If you like, you can also sprinkle fresh parsley over them and stir briefly. Eat immediately, otherwise the bread cubes will become mushy. I always make this soup when I have leftover bread rolls from the day before.
