Crispy oven-baked chicken thighs

Ingredients for 4 servings:

  • 4 chicken legs
  • 2 tsp baking powder
  • 2 tsp vegetable oil
  • 1 tsp sweet paprika powder
  • 5 allspice berries
  • 1 tsp pepper (Mac Khen pepper}
  • 2 tsp coriander seeds, alternatively 1 tsp ground
  • some salt

Working time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour

The chicken should be stored uncovered in the refrigerator so the skin can dry out a little; ideally overnight. Preheat the oven to 200°C fan/gas mark 3 (very important). Grind the allspice, coriander seeds, Mac Khen pepper, and salt in a mortar and pestle. Then add the paprika and baking powder and mix everything together. Place the spice mix in a large bowl and marinate the chicken thighs all over. Now add a little vegetable oil and knead it into the chicken thighs until they are lightly coated. Place some aluminum foil or baking paper on a baking tray, place the grill rack on top, and arrange the chicken thighs on it. This is important to allow air to circulate. Place in the preheated oven for 45-50 minutes. Turn once after about 20-25 minutes. If you want it to be even crispier, you can turn on the grill for the last five minutes.
