Wild boar fillet in wild garlic and bacon

Ingredients for 4 servings:

  • 2 fillets of wild boar
  • 1 bunch of wild garlic
  • 8 slice(s) ham, raw, smoked
  • Salt
  • Pepper, coarse
  • Oil, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Halve the wild boar fillets and season with salt and coarse pepper. Top two slices of ham with wild garlic leaves, twist half a fillet into the wild garlic leaves, and secure with a toothpick. Brown the fillets in hot oil in a pan and continue cooking over low heat for about 25 minutes. Serve with rosemary potatoes and salad.
